Break your graham crackers in half, if necessary.
Break chocolate into desired-size pieces.
Place one piece of chocolate on half of the a graham cracker halves. Set aside the other half of the graham cracker halves for the top of the s’mores.
Push a marshmallow onto the end of a stick or clean skewer.
Toast your marshmallow over an open flame until it is cooked to your liking, rotating as you go to ensure it is evenly toasted.
Once your marshmallow is done, put the marshmallow on top of the graham cracker with chocolate, and use another graham cracker to hold your marshmallow in place while you pull the stick or skewer away.
Best prepared one at a time and enjoyed immediately!
REGINA’S TIP:
Looking for a fun twist on a classic s’mores? Try swapping a peanut butter cup for the chocolate bar. Justin’s, Reese’s, SkinnyDipped, and Unreal peanut butter cups are all celiac-safe.
REGINA’S GASTROPARESIS TIP:
Depending on the severity of your gastroparesis, a single s’mores may be tolerated. Anything more than that may exacerbate your symptoms because of the fat content of the graham crackers and chocolate. That being said, marshmallows are a fat- and fiber-free food that is generally gentle on gastroparesis tummies, so feel free to toast up a few and eat them plain as a yummy treat!
