Chocolate Almond Truffles

Makes approximately 2½ dozen truffles

 

Ingredients

  • ½ Cup evaporated milk

  • ¼ Cup sugar

  • 2 Cups semi-sweet chocolate chips

  • ½ to 1 teaspoon almond extract

  • Finely chopped almonds or almond meal and/or unsweetened cocoa powder, for coating

 

Instructions

  1. Combine evaporated milk and sugar in a small saucepan. Cook over medium heat until mixture comes to a full rolling boil. Boil for 3 minutes, stirring constantly.

  2. Remove from heat. Stir in chocolate chips and almond extract until the chips melt and the mixture is smooth but thick.

  3. Pour mixture onto wax or parchment paper and wrap tightly. Chill in the refrigerator.

  4. Test chilled chocolate starting at 45 minutes by rolling into a 1-inch ball to ensure the candy holds its shape. If not, chill for another 15 minutes and test again. If so, proceed to the following step.

  5. Shape into 1-inch balls, then roll each ball in your coating of choice.

  6. Chill until ready to serve.

 

TIP: We love to coat half of our truffles in chopped almonds or almond meal, and the other half in cocoa powder. Coconut flakes could be a good alternative.
